Meat
Note: This recipe is doubled, as we usually make it in our house for 2 nights of food.
Kofta
- 1 lb / 500 g lamb mince (ground lamb)
- 1 lb / 500 g 85% ground beef
- 1 onion , grated
- 1/2 cup breadcrumbs , preferably panko
- 4 cloves garlic , crushed
- 4 tbsp chopped fresh coriander
Kofta Spices
- 4 tsp cumin
- 4 tsp coriander
- 4 tsp paprika
- 3 tsp ground cinnamon
- 1/2 tsp cayenne pepper (Original was 1.5 tsp)
- 2 tsp cooking / kosher salt
- 1 tsp black pepper
Instructions
- Mix all ingredients and spices.
- Split into 16 even balls (about 80g each).
- Roll into sausage-shaped pieces, and refrigerate. Optional: Add skewers.
- Stove: heat 1/2 tbsp oil over medium heat and cook in batches of 5 minutes.
- Grill: BBQ on high for 6 minutes
- Oven/broiler: 10" from heat source for 12 minutes
Yellow Rice
Yellow Rice Spices
- 1/4 cu EVOO
- 1-2 onions, finely diced
- 2 garlic cloves, crushed or minced
- 3 cu chicken broth
- 3 cu rinsed jasmine rice
- 1.5 Tbsp Sazon with saffron seasoning
- 1 stick (1/2 cu) butter
- (optional): 1 bay leaf
- (optional): zest from 2 limes
- (optional): 1.5 Tbsp turmeric (I did not use)
- (optional): 3 chicken boulion cubes (I did not use)
Yellow Rice Instructions
- Heat oil in pan, and saute onions and garlic
- Move to instant pot, and add all other ingredients
- Pressure cook for 5 minutes, with a 10 minute natural release.
White Sauce
White Sauce Spices
- 1 cu plain Greek yogurt
- 1 cu sour cream
- 1/2 cup mayonnaise
- 1/4 cup fresh lemon juice
- 1/2 tsp garlic powder (or 3 cloves of garlic, minced or grated)
- 1/2 tsp salt

Meal instructions
- Make naan, as per this link.
- Make kofta, rice, and white sauce.
- Slice cucumber for side.
- Slice one red onion for side.
- (Optional): Kalamata olives, Feta cheese
- (Optional): Lemonade
